I am very happy to be sharing with you some oh so good recipes on the blog.

Have you ever eaten something and said “mmmm! I should really get the recipe for this ____.”, well this is has happened to me MANY times! I love to try new recipes and have have made some over the years that have been quite delicious and share worthy.  This is what inspires me to share with you some of my favorite finds that you may cook\bake for your next meal. You will notice that most of these recipes are quite easy as unfortunately, we don’t always take the time to make 5 course meals.

So before you skip over this recipe as beets do not appeal to everyone and yes I am aware, let me start by saying I have tried this recipe with carrots instead of beets and it is also delicious!  Nevertheless, this is a recipe I make over and over again as it is simple and very nutritious.

My food philosophy

As this is my first recipe post, I would like to give you a better idea of my food philosophy and how I choose the recipes I will be sharing with you on Citrus Love.  To keep it brief, I am very particular about the food I eat, I try to use mainly whole ingredients either local or organic.  I primarily focus on the flavor, thus you will notice that I enjoy adding fresh herbs and spices to my food.  I carefully choose recipes based on the ingredients and the proportions.  I do not follow any specific diets, I love food and I eat what I want in moderation.  Although, I do not eat any red meat (a preference but it is basically to keep my energy levels up) and limit dairy products (due to the mucus build-up it creates in my system).  I absolutely enjoy trying new recipes that are healthy and nutritious whether it is from another blog, cookbook, magazine or from any other source. Regardless, I will ONLY share with you my absolute favorites and what I like to describe as Oh So Good!!

Let’s begin cooking….

For this recipe I used organic packaged pre-cooked beets to cut down on time. You can always boil the beets in advance as they take about 40 minutes to cook. Both are good options. Be sure to cut the beets in half as they will blend easier. Then add all of the ingredients….parsley, garlic, olive oil and tahini butter.

Blend until you get an almost smooth texture.

Season with salt as desired.

Quick & Easy Healthy Beet Dip

A quick and easy beet dip that is oh so good, colorful, tasty, nutritious and a perfect appetizer or snack for when you are on the go.
Ingredients
  • 4 Medium size cooked beets
  • A handful of fresh parsley
  • 3 Tbsp of olive oil or until you get the desired texture
  • 2 garlic loves (I like to taste the garlic)
  • 1 Tbsp of tahini butter
  • A pinch of salt
Instructions
  1. Using a mixer add all of the ingredients. Cut the beets in half and add the garlic cloves, parsley, tahini butter and olive oil while mixing until the dip is the right thickness.
  2. Season with salt to taste and serve cold.
Notes
Season with parsley and serve with tortillas, crackers, pita or bread.
