Tasteful, healthy, veggie packed, surprisingly oh soo good, this dip will become a new crowd-pleaser!

Always trying to find ways to eat more vegetables and to have my family eat their vegetables, sometimes you have to sneak them in recipes.  Although this dip might look like a regular creamy cheesy dip, it is actually dairy-free, gluten-free and low in calorie as it mainly consist of mixing different vegetables together.

I actually found this recipe in a health magazine (Gluten-Free Living) which has become one of my favorite places to find unconventional and healthier recipes.

My mother actually made this recipe as an appetizer for a family dinner and everyone loved it!

So here is the recipe for you to try at home, I’d love to know if you actually try it.

Serves: 3 cups
Taste like a nacho dip but without any cheese.
Ingredients
  • 1/4 cup olive oil
  • 1/2 cup tomato juice or tomato sauce
  • 1 cup cauliflower
  • 1 cup carrots
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion…don’t put to much or else the dip will only taste like onions!
  • 2 garlic cloves
  • 1 jalapeno pepper (remove seeds for a milder flavor)
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp ground turmeric
  • 2 tbsp nutritional yeast
Instructions
  1. Boil carrots and cauliflower until soft.
  2. Put all the ingredients together in a blender and mix until smooth.
  3. Refrigerate up to a week in a sealed container.
  4. Enjoy!
